Meal Idea #1

PORK CHOPS W/ BEANS AND RICE
CHULETAS DE PUERCO CON ARROZ Y FRIJOLES

Very simple dinner! I always try and make some Pico de Gallo to add a little more flavor to the pork chops. (Not a very diet friendly meal but very yummy for the tummy- You know I didn't get this body by eating salads!!! LOL, LOL, LOL!)

The Pico de Gallo is super simple just chop jalapeƱo, tomato, onion and garlic (usually i just add one clove of garlic and one or two jalapenos depending if they smell too spicy, as far as the tomato I do about 2 or 3 depending on size and the onion I just eye it - I don't like too much onion in it. Add salt and lime juice to taste.

Bruschetta Chicken Bake

I got this recipe from "Kraft Food & Family" magazine it is also found on the Stove Top Stuffing Mix box. It is super easy and very good.

1 can (14-1/2 oz.) diced tomatoes, undrained
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1/2 cup water
2 cloves garlic, minced
1-1/2 lb. boneless skinless chicken breasts, cut into bite-size pieces
1 tsp. dried basil leaves
1 cup KRAFT 2% Milk Shredded Mozzarella Cheese

Heat oven to 400. Mix tomatoes, stuffing mix, water and garlic just until stuffing mix is moistened. Layer chicken, basil and cheese in 3-qt. casserole or 13x9-inch baking dish. Top with stuffing. Bake 30 min. or until chicken is done.
