Arroz y Fish


So here is my contribution to the blog, this is my kind of cooking- easy! This is how you make:

Fish: I usually buy Salmon-look for it on sale- this is some kind of trout. I preheat oven to 350', butter the baking pan (I use glass) cut the fish to desired size, makes it faster to cook in pieces. Sprinkle lime juice and some montreal steak spices, place skin down on pawn put in oven and bake until flaky (approx 30 min.-but don't take my word on it)

Rice- Take out the rice cooker, one cup of rice, two cups of water, minced garlic, salt and push the button to cook, takes about 20 to 30 min.

Veggies-Take the frozen bag of veggies from the freezer, put desired amount in pan add some water and butter and boil! You can also microwave-but this way makes them plumb up a little more taste a little fresher.

That's it! I facebooked while everything cooked! I wish everything was this easy!

Meal Ideal # 4

Shredded Beef Torta or Sub

So the other day I made some meat to have Shredded Beef burritos and we had plenty of meat leftover for the next day but we ran out of tortillas. I went to the store to buy some more, as soon as I walked in the store I could smell the bread! So of course I broke down (it didn't take much) I bought the bread and made a big torta it was delicious and it was a bit more exciting then having the "same" thing for dinner even though it was virtually the same.

Meal Idea #3

Chicken Caesar Salad



This is super easy! Just cook chicken like you normally would or you can grill it (I have grilled it before on my George Foreman Grill and it taste super good)! I use Romaine Lettuce, Red Onions, Peperoncini Peppers, Mozzarella Cheese, Parmesan Cheese, Croutons and Caesar salad Dressing. (I use Ken's Creamy Caesar, if you guys know of a better brand or a good recipe from scratch let me know-not super impressed with Ken's dressing.)

FAJITAS CON PAPA







I don't want to brag about this one, but it turned out DELICIOUS! This is one of my favorite dishes, after my mom's enchiladas of course. So here it goes:






5 small chuck tender steaks (diced)



3 russett potatoes(diced=cut into cubes)



1/2 bell pepper (julienne=short,matchstick-sized strips)



4 green onions (chopped)



1 tomatoe(julienne somewhat)



salt and pepper to taste



1 large clove of garlic(minced)



steak seasoning(it's a blend of tenderaziers)






1) Cook and soften the bell pepper, onions and finally add tomatoes, add salt so they start sweating and glazing- set aside



2) Fry the potatoes in med. sauce pan with oil, salt and pepper, I find that using kosher salt adds more flavor, supposedly fine salt/table salt should be used for baking only. Set aside



3)Cook throughly steak with garlic, steak seasoning, salt and pepper, when it is cooked add potatoes and vegetables to the meat and voila!



4) Serve on a flour or corn tortillas or even make a rice as a side dish.






Serves 6 people (3 adults and 3 children)



I had added the vegetables to the already done potatoes. This is what they look like....




And here is my happy little monster!

Chicken and Vegetables with White Rice




This recipe comes from Carolina's cookbook and it's been one of our "favorite dishes". It's simple and healthy- so if your goal was to lose weight this year, make this any day of the week.

I used 4 boneless chicken breasts
1 bag of frozen vegetables (see picture)
seasoning for chicken, salt, pepper, garlic salt, dry minced onion

Cut and cook chicken with seasonings. In a medium sauce pan thaw vegetables following directions in the bag. Then add vegetables to chicken.

I also made a simple white instant rice, or you could make your own white rice. Just follow directions on box. (water and instant rice- I added butter, salt and pepper) ...
And finish it off with some sweet and sour sauce! Enjoy!

Meal Idea #1

PORK CHOPS W/ BEANS AND RICE
CHULETAS DE PUERCO CON ARROZ Y FRIJOLES

Very simple dinner! I always try and make some Pico de Gallo to add a little more flavor to the pork chops. (Not a very diet friendly meal but very yummy for the tummy- You know I didn't get this body by eating salads!!! LOL, LOL, LOL!)

The Pico de Gallo is super simple just chop jalapeƱo, tomato, onion and garlic (usually i just add one clove of garlic and one or two jalapenos depending if they smell too spicy, as far as the tomato I do about 2 or 3 depending on size and the onion I just eye it - I don't like too much onion in it. Add salt and lime juice to taste.

Bruschetta Chicken Bake

I got this recipe from "Kraft Food & Family" magazine it is also found on the Stove Top Stuffing Mix box. It is super easy and very good.

1 can (14-1/2 oz.) diced tomatoes, undrained
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1/2 cup water
2 cloves garlic, minced
1-1/2 lb. boneless skinless chicken breasts, cut into bite-size pieces
1 tsp. dried basil leaves
1 cup KRAFT 2% Milk Shredded Mozzarella Cheese

Heat oven to 400. Mix tomatoes, stuffing mix, water and garlic just until stuffing mix is moistened. Layer chicken, basil and cheese in 3-qt. casserole or 13x9-inch baking dish. Top with stuffing. Bake 30 min. or until chicken is done.
