Shredded Beef Torta or Sub
So the other day I made some meat to have Shredded Beef burritos and we had plenty of meat leftover for the next day but we ran out of tortillas. I went to the store to buy some more, as soon as I walked in the store I could smell the bread! So of course I broke down (it didn't take much) I bought the bread and made a big torta it was delicious and it was a bit more exciting then having the "same" thing for dinner even though it was virtually the same.Friday, March 27, 2009

Chicken Caesar Salad
This is super easy! Just cook chicken like you normally would or you can grill it (I have grilled it before on my George Foreman Grill and it taste super good)! I use Romaine Lettuce, Red Onions, Peperoncini Peppers, Mozzarella Cheese, Parmesan Cheese, Croutons and Caesar salad Dressing. (I use Ken's Creamy Caesar, if you guys know of a better brand or a good recipe from scratch let me know-not super impressed with Ken's dressing.)

FAJITAS CON PAPA

I don't want to brag about this one, but it turned out DELICIOUS! This is one of my favorite dishes, after my mom's enchiladas of course. So here it goes:
5 small chuck tender steaks (diced)
3 russett potatoes(diced=cut into cubes)
1/2 bell pepper (julienne=short,matchstick-sized strips)
4 green onions (chopped)
1 tomatoe(julienne somewhat)
salt and pepper to taste
1 large clove of garlic(minced)
steak seasoning(it's a blend of tenderaziers)
1) Cook and soften the bell pepper, onions and finally add tomatoes, add salt so they start sweating and glazing- set aside
2) Fry the potatoes in med. sauce pan with oil, salt and pepper, I find that using kosher salt adds more flavor, supposedly fine salt/table salt should be used for baking only. Set aside
3)Cook throughly steak with garlic, steak seasoning, salt and pepper, when it is cooked add potatoes and vegetables to the meat and voila!
4) Serve on a flour or corn tortillas or even make a rice as a side dish.
Serves 6 people (3 adults and 3 children)

Chicken and Vegetables with White Rice

This recipe comes from Carolina's cookbook and it's been one of our "favorite dishes". It's simple and healthy- so if your goal was to lose weight this year, make this any day of the week.
I used 4 boneless chicken breasts
1 bag of frozen vegetables (see picture)
seasoning for chicken, salt, pepper, garlic salt, dry minced onion
Cut and cook chicken with seasonings. In a medium sauce pan thaw vegetables following directions in the bag. Then add vegetables to chicken.
I also made a simple white instant rice, or you could make your own white rice. Just follow directions on box. (water and instant rice- I added butter, salt and pepper) ...
